Palladino 's Barolo Serralunga 2021 is a wine that blends power, elegance, and structure, embodying the unique character of Nebbiolo in the Serralunga d'Alba crus. In the glass, it displays an intense garnet color that evolves into ruby tones with oxygenation. On the nose, it unfolds a complex bouquet of dried roses, violets, ripe cherries, dried plums, and spicy notes (licorice, black pepper), with balsamic and earthy nuances that enhance the depth of the terroir. On the palate, it is full-bodied, vigorous, yet harmonious, with well-defined and vibrant tannins, good acidity, and a lingering, savory finish that invites reflection. Conventional Production Method : The grapes are 100% Nebbiolo , selected from the company's vineyards in the crus of the municipality of Serralunga d'Alba. The harvest is manual with meticulous selection of the bunches. Fermentation takes place in stainless steel at a controlled temperature, with prolonged maceration to allow for gradual and targeted extraction. After malolactic fermentation, the wine ages for at least 24 months in large oak barrels , followed by a period of bottle ageing before release, to harmonize the whole wine and enhance the balance between structure and finesse.
Pairings: Ideal with full-bodied dishes: braised meats, stewed red meats, game, stews, roast beef, wild boar, and lamb. It also pairs beautifully with aged cheeses, truffles, and rich, aromatic traditional Piedmontese dishes.
