Conventional Production Method : The grapes used are 100% Nebbiolo from Bartolo Mascarello's historic vineyards (among the crus of Cannubi, San Lorenzo, Rué, and Rocche in Barolo/La Morra). Harvesting is strictly manual, with careful selection of the bunches. Fermentation takes place with indigenous yeasts in tanks (concrete or traditional barrels), with long maceration (traditional "submerged cap" technique, slow fermentation). Aging takes place exclusively in large neutral wood barrels for 2.5-3 years, followed by a further period in the bottle before release. This approach preserves the territorial character and classic character of Barolo Mascarello, without modern barrique influences.
Pairings: Perfect with noble and traditional dishes: braised meats, roast beef, wild boar, lamb, venison, game in general, and stews. It also pairs very well with rich aged cheeses and truffle-based dishes. Ideal for moments of meditative tasting.
