Certified organic production method , hand-harvested from a vineyard of approximately 1 hectare in Sas de Melas, spontaneous fermentation with indigenous yeasts in PVC or stainless steel tanks for 12-15 days, lengthy maceration on the skins to extract color and structure, aging for several months in stainless steel (sometimes with a brief stint in 1000-liter oak barrels for some batches), manual bottling without filtration, hand-labeling. Production limited to approximately 3,000-4,000 bottles.
