Collemassari's Brunello Poggio di Sotto 2011 is a Montalcino icon, a wine combining power and grace from organic vineyards in Castelnuovo dell'Abate. This intense ruby red releases a complex bouquet of black cherry, violet, leather, and fine spices, with a minerality reminiscent of the stony soil. Aged for 36 months in large oak barrels, it offers a full, velvety palate with well-defined tannins and a long, balsamic finish. The 2011 vintage, considered excellent despite being dry and hot, the producer succeeded in infusing this wine with remarkable balance.
Production Method: Organic, manual harvest, spontaneous fermentation in wooden vats for 20-25 days, aging for 36 months in large Slavonian oak barrels, refinement in bottle for 12 months.

Pairings: Stewed wild boar, steak, aged cheeses
