Castello della Sala's 2024 Cervaro della Sala, produced by Antinori, is a refinedly elegant white wine, created from a blend of Chardonnay and a touch of Grechetto. It displays a luminous straw yellow with greenish highlights, offering a complex bouquet of smoky notes, cedar, and broom flowers. On the palate, it is vibrant and fresh, with nuances of vanilla and lemon butter, enveloped in a harmonious structure and a lingering finish. A wine that embodies the sophisticated harmony of a unique terroir, perfect for aging.

 The name Cervaro derives from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes blended with a small amount of Grechetto create a wine designed to age over time and represent the elegance and complexity of a unique location. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and age in barriques, with the first vintage released in 1985.

 Castello della Sala is located in Umbria, a short distance from the Tuscan border, approximately 18 kilometers from the historic city of Orvieto. The lands of the Castello, an imposing medieval manor, extend over 600 hectares, 200 of which are planted with vineyards, at an altitude of 220-470 meters above sea level, amid the rolling hills that characterize the beautiful countryside of this area. The soil is predominantly clayey and calcareous, rich in fossil shells, with vineyards well exposed to the rising sun and excellent temperature ranges: Castello della Sala is a highly suited area for the production of white wines. One exception: Pinot Noir, which finds ideal conditions in this terroir to express its full potential.
