Antinori’s Conte della Vipera 2023 is a refined white that pays homage to the Monaldeschi della Vipera, the first owners of Castello della Sala, with a label featuring the estate’s 13th-century chapel of San Giovanni. This straw yellow with green highlights releases a bouquet of pink grapefruit, lychee, sage, and elderflower, with a freshness that reflects the Umbrian terroir. On the palate, it is agile and structured, with notes of lime and pineapple that dominate a persistent, mineral finish. Produced from vineyards at 250-350 meters above sea level, on clay soils rich in marine fossils, it is a wine that combines elegance and vivacity, perfect for enhancing seafood dishes or summer aperitifs.
Production Method The Sauvignon Blanc and Sémillon grapes are hand-picked from vineyards at 250-350 meters above sea level, on clay soils rich in marine fossil sediments. The grapes, immediately transferred to the cellar, are cooled in a refrigerated conveyor before soft pressing, to preserve the varietal aromas. The must is decanted at 10 °C for a few hours, then fermented in steel at 16 °C. After fermentation, the wine ages in steel on the lees for a few months and then in the bottle for about 3-4 months before being released for sale.
