Roccolo Grassi's Valfresca 2019 is a profound and authentic interpretation of Valpolicella Superiore, combining finesse, structure, and a powerful expression of its terroir. In the glass, it displays a deep, brilliant ruby red. On the nose, it reveals a complex bouquet of ripe cherries, black cherries, and berries, complemented by floral notes, sweet spices, aromatic herbs, and a subtle minerality. The palate is full and balanced, with well-crafted tannins, a lively freshness, and a long, elegant, and savory finish. A wine of character, designed to evolve gracefully over time.


Production Method: Conventional. The grapes come from the “Valfresca” vineyard, located in eastern Valpolicella on calcareous, well-ventilated soils. The blend is composed of Corvina / Corvinone / Rondinella , with a small percentage of Croatina . The harvest is manual with rigorous selection of the bunches; a portion of the grapes undergo a short drying process. Fermentation takes place in concrete and steel tanks with maceration on the skins for approximately 20 days. After malolactic fermentation, the wine ages for approximately 24 months in French oak barriques , followed by a period of bottle aging before release, fully respecting the winery's elegant and modern style.


Pairings: Ideal with rich Italian dishes: roast red meats, braised meats, light game, roast lamb, and mature cheeses. Also excellent as a meditation wine.
