The Valpolicella Superiore 2019 by Roccolo Grassi is a red that combines elegance and structure, produced from the Roccolo Grassi vineyard, the beating heart of the winery. This intense ruby with garnet reflections offers a bouquet of black cherry, raspberry, fresh flowers and sweet spices, with a delicate hint of leather and vanilla. Aged for 20 months in wood, it stands out for a decisive and harmonious palate, with a backbone of freshness and flavor that makes the sip agile, despite a sustained body. The 2019 vintage, warm but well-balanced, gives this wine a complexity that evolves in the glass, with a fruity and persistent finish, perfect to accompany traditional Venetian dishes or for long aging until 2035.

Production Method The grapes come from the Roccolo Grassi vineyard, 8 hectares with south-east exposure at 200 meters above sea level, on clayey-calcareous soils with volcanic and basaltic components, with vines aged between 5 and 10 years. Manual harvest at the end of September, with 50% of the grapes dried for 20 days to concentrate the aromas. Fermentation in steel at 28 °C for 15 days, with maceration on the skins. Aged for 20 months, half in French oak barriques (second and third passage) and half in large 22 hl barrels, followed by 10 months in the bottle.

Pairings First courses with meat sauce, roasts, light game, medium-aged cheeses.
