Sassicaia is a Tuscan icon that dances between power and refinement, this wine seduces with a masterful balance and a bouquet that tells the story of the Bolgheri territory with every sip, one of the most famous Italian wines in the world. It comes from a 75-hectare vineyard that is particularly suited, where the plots have different characteristics, with limestone formations and a high stony content, a peculiarity from which the toponym "sassicaia" derives. The exposure of the land is west and south-west. Fermentation takes place in steel, at a controlled temperature, with maceration for about 10 days. The refinement of the Bolgheri Sassicaia DOC of Tenuta San Guido takes place in French oak barriques, for 24 months, with subsequent aging in the bottle.
Conventional Production Method , Manual harvest between September and October 2021, with an earlier harvest than many neighbors to preserve freshness and finesse. Spontaneous fermentation with indigenous yeasts in stainless steel tanks at a controlled temperature (28-30 °C) for approximately 2 weeks, with macerations up to 20 days for some Cabernet lots. Spontaneous malolactic fermentation. Aged for 25 months in French oak barrels (40% new, 40% first passage, 20% second passage; 95% French, 5% Hungarian/Slavonian), with occasional bâtonnage to build texture. Final blending in steel with micro-oxygenation, followed by further bottle aging before release in 2024.
