Cervaro della Sala 2021 A refined and complex white, born from the mastery of Antinori at Castello della Sala. It stands out for its Mediterranean elegance, with mineral and fruity notes that intertwine with nuances of vanilla and butter, promising an extraordinary evolution over time.
The name Cervaro comes from the noble family that owned Castello della Sala during the 14th century: the Monaldeschi della Cervara. Chardonnay grapes combined with a small part of Grechetto for a wine designed to refine over time and represent the elegance and complexity of a unique place. Cervaro della Sala was one of the first Italian white wines to undergo malolactic fermentation and refinement in barriques with the first vintage in 1985.
Castello della Sala is located in Umbria, a short distance from the border with Tuscany, about 18 kilometers from the historic city of Orvieto. The lands of the Castle, an imposing medieval manor, extend for 600 hectares, of which 200 hectares are planted with vineyards, at an altitude of 220 - 470 meters above sea level, among the rolling hills that characterize the beautiful countryside of these areas. The soil is mainly clayey, calcareous, rich in fossil shells, with vineyards well exposed to the rising sun and with excellent temperature ranges: that of Castello della Sala is an area highly suited to the production of whites. One exception: Pinot Noir, which finds in this terroir the ideal conditions to express itself at its best.
