The 2021 Barolo from Bartolo Mascarello is a wine that honors the most authentic and classic Barolo tradition. In the glass, it displays a deep garnet color, evolving toward ruby hues with age. The nose reveals a rich and complex bouquet: dried roses, violets, ripe cherries, plums, and raspberries, accompanied by notes of delicate spices, licorice, tar, tobacco, and ethereal nuances. On the palate, it is harmonious and penetrating: noble and silky tannins, great freshness, elegant structure, and a long finish. Conventional Production Method : The grapes are 100% Nebbiolo , harvested from vineyards in the historic crus of Cannubi, San Lorenzo, Rué, and Rocche dell'Annunziata (a traditional blend of multiple geographical indications). The harvest is manual with rigorous selection of the bunches. Fermentation takes place in glass-lined concrete vats or tanks with indigenous yeasts, with prolonged maceration (approximately 48 days with submerged cap). The wine is aged for 2.5–3 years in large Slavonian oak barrels, followed by a further period in the bottle before being released for sale.
Pairings: It pairs well with dishes such as braised meats, roast meats, game, lamb, venison, ossobuco, roast beef, and mature, structured cheeses. It's also perfect with truffle-based dishes or rich mushrooms.
