Palladino’s Barolo Riserva San Bernardo 2016 is a wine of extraordinary complexity, born from the San Bernardo cru in Serralunga d’Alba, a 2-hectare vineyard on calcareous-clayey soils with an east/southeast exposure. This luminous garnet red offers a rich and multifaceted bouquet, where vegetal notes of rosemary and bitter orange intertwine with ripe red fruits, licorice, pepper and a hint of truffle. Aged for 36 months in large Slavonian oak barrels and further in bottle for at least 24 months, it presents itself on the palate with a vigorous structure, powerful yet refined tannins and a persistent and citrusy finish. Produced only in the best vintages, it is an icon of elegance and longevity, perfect for celebrating the tradition of the Langhe or for aging that will enhance its virtues.
Production Method: Conventional, fermentation in stainless steel tanks at controlled temperature for 15-20 days, maceration on the skins, maturation 36 months in large Slavonian oak barrels of 25-50 hl, minimum refinement 24 months in bottle
Pairings: Roasts, braised meats, game, mature cheeses
