Champagne Pierre Gerbais Les Grandes Côtes Extra Brut is a Blanc de Noirs produced by the Pierre Gerbais house, located in Celles-sur-Ource, in the Côte des Bar (Aube). Made with 100% Pinot Noir, this champagne comes from the Les Grandes Côtes estate, a unique terroir characterized by Kimmeridgian soils (marl and fossil limestone, similar to Chablis) and Portlandian (harder, with less clay and no fossils), which respectively give minerality/acidity and a fruity profile. It is a blend of base wine and perpetual reserve wines (from 2011 to 2019), combining power and balance.
Organoleptic characteristics:
Color: Bright straw yellow with fine and persistent perlage.
Nose: Intense bouquet with notes of brioche, sultanas, baked pear, red apple, raspberry and redcurrant, accompanied by nuances of toasted bread, citrus fruits and a marked chalky minerality.
Palate: Fresh, structured and creamy, with an elegant bubble and a lively acidity. It develops with flavors of white and red fruit (apple, pear, peach), white pepper and a dry, long finish, with notes of citrus and pure minerality.
Dosage: Extra Brut, with 3 g/l of sugar, which enhances freshness and purity.
Production method : The grapes are hand-picked and pressed with a traditional Coquard press. Vinification takes place in stainless steel tanks, with alcoholic and malolactic fermentation completed, without the addition of sulfur dioxide during vinification and refinement. The base wine is blended with a perpetual reserve (from 2011 to 2019), aged on the lees for 36 months and disgorged 6 months before release. Total sulfur dioxide is minimal (25-30 ppm at bottling). Limited production: approximately 4,600-5,000 bottles.
Pairings : Perfect with gorgonzola and radicchio risotto, shellfish, grilled fish, carpaccio or mature cheeses. Also ideal as an aperitif for its freshness and complexity.
