Cavalleri's Franciacorta Blanc de Blancs Nature BIO is an icon of Erbusco, a pure expression of Chardonnay that reflects the philosophy of this historic winery: elegance, purity and respect for the terroir. This bright straw yellow sparkling wine, with a fine and persistent perlage, releases a complex bouquet of green apple, lime, white peach and elderflower, enriched by notes of bread crust and yeasts, typical of a long aging on the lees. Produced without sugar dosage, it offers a dry, fresh and incisive palate, with a creaminess that balances the marked acidity and a mineral finish that recalls the moraine soil of Franciacorta. A Blanc de Blancs of great refinement, perfect for celebrating special moments or to accompany seafood dishes with its extraordinary versatility.
 Production Method The Chardonnay grapes come from the estate's hillside vineyards in Erbusco (approximately 42 hectares), cultivated following the principles of organic and biodynamic agriculture, with an average yield of 85 quintals/hectare and a vinification yield of 50% (50 litres of wine per quintal of grapes).
 The harvest is manual, with vinification parcel by parcel. The primary fermentation takes place for 80% in stainless steel vats and for 20% in large oak barrels, using indigenous yeasts for most of the parcels (15% of the cuvée with spontaneous yeasts).
 Malolactic fermentation is partial. The blend includes 90% base wines from the 2020 vintage and 10% reserve wines from previous vintages, stored at low temperatures.
 The second fermentation takes place in the bottle according to the Classic Method, with an aging on the lees for at least 24 months (tirage in spring 2021, disgorgement in autumn 2023). The wine is a Nature, therefore without sugar dosage, to enhance the purity of the fruit and the terroir.
 Pairings Raw fish (sushi, oysters), shellfish, seafood risotto, baked sea bream or sea bass, fresh cheeses such as goat cheese, or for an excellent elegant aperitif.
