Prosecco Vignale di Cecilia DOC is a Brut Nature sparkling wine produced by the Vignale di Cecilia farm, located in Baone, on the Euganean Hills in Veneto. Obtained from 100% Glera grapes grown on calcareous and volcanic soils, this Prosecco reflects an artisanal and organic approach, with particular attention to naturalness and the tradition of winemaking.
Organoleptic characteristics :
Color: Light straw yellow with fine and persistent perlage.
Nose: Fresh and intense aromas of white fruit (pear, green apple), citrus fruits (lemon zest, grapefruit), white flowers (orange blossom) and mineral notes with herbaceous and saline nuances.
Palate: Fresh, savoury and mineral, with a soft and creamy bubble. It is distinguished by a dry, balanced taste, with hints of fresh fruit, a pleasant acidity and a persistent finish with earthy and mineral notes.
Alcohol content: 11.5% vol.
Dosage: Brut Nature (0-3 g/l of sugar), which enhances the purity and freshness of the wine.
Production method : The Glera grapes are harvested by hand and subjected to a soft pressing to extract the free-run must. The primary fermentation takes place in stainless steel tanks at 14°C with indigenous yeasts, without the addition of sulfur dioxide during vinification. The second fermentation follows the Charmat method (Martinotti) in pressurized autoclaves, with an aging on the yeasts for about 4 months, which gives complexity and finesse to the bubble. The company, certified organic, uses non-invasive techniques and a minimal use of sulphites (about 25-30 ppm at bottling). Limited production: less than 30,000 bottles per year.
Pairings : Ideal as an aperitif, it pairs perfectly with fish appetizers, shellfish, fried foods, pizza, medium-aged cheeses (such as Asiago or Taleggio) and delicate cured meats. Also excellent with salmon tartare or vegetarian dishes.
