Cappellano's Barolo Pie Rupestris 2019 is an iconic wine, produced from vines grafted onto American rootstock (Rupestris) in the Gabutti cru in Serralunga d'Alba. This ruby red with garnet hues offers an intense and earthy bouquet of dried rose, cherry in alcohol, leather and truffle, with a deep minerality. Aged for 36 months in large Slavonian oak barrels, it presents itself with an austere structure, firm tannins and a freshness that guarantees a long evolution. Production Method: Organic, spontaneous fermentation with indigenous yeasts in wooden vats for 20-30 days with maceration on the skins, maturation 36 months in large Slavonian oak barrels of 20-40 hl, refinement in bottle for at least 12 months
