GD Vajra’s Barolo Ravera 2019 is a wine of extraordinary depth, born from the Ravera cru in Novello, a 2.7-hectare vineyard on calcareous marl soils with a south-west exposure. This intense ruby red with garnet highlights releases a rich bouquet of black cherry, violet, graphite and dark spices, with a mineral note reminiscent of flint. Aged for 30 months in large Slavonian oak barrels, it offers a powerful and austere structure, with vigorous yet elegant tannins and a long, persistent finish. A Barolo of great character, perfect for aging that will enhance its complexity.
Production Method: Organic, spontaneous fermentation with indigenous yeasts in stainless steel tanks for 30-40 days with submerged cap, maturation 30 months in large Slavonian oak barrels of 25-50 hl, refinement in bottle for at least 12 months
Pairings: Game, braised meat in Barolo, aged cheeses
