Cavallotto's Barbera d'Alba Superiore Vigna del Cuculo comes from a single vineyard on Bricco Boschis, with vines planted in 1962. A wine of great character, with the lively acidity typical of Piedmontese Barbera balanced by serious structure. The nose shows ripe cherry, liquorice, white pepper and blood orange. The palate is enveloping, fresh and persistent.
Production method: Spontaneous fermentation with native yeasts in concrete tanks, with maceration of about 15 days. Aged for 24 months in large 20–50 hl Slavonian oak casks, then 6 months in bottle.
Food pairings: Pasta with ragù, grilled red meats, Piedmontese cured meats, aged cheeses.
