The Badia a Passignano Chianti Classico Gran Selezione 2021 by Antinori is a wine that celebrates the tradition of Chianti Classico, produced from selected vineyards around the ancient abbey of Passignano, at 250-300 meters above sea level. This intense ruby red with garnet reflections releases a bouquet of ripe cherry, violet, tobacco and sweet spices, with a touch of graphite that recalls the calcareous soil. Aged for 14 months in barriques and Hungarian oak barrels in the historic cellars of the monastery, it offers a broad and structured palate, with soft tannins and a long and spicy finish. The 2021 vintage, balanced and fresh, gives this wine extraordinary elegance and aging potential until 2040.

Production Method The Sangiovese grapes come from the 56 hectares of vineyards of Badia a Passignano, on calcareous soils, using clones selected from old Tignanello vines. Manual harvest at the end of September, fermentation in steel at 28 °C for 10-12 days, with maceration on the skins for 15 days. After malolactic fermentation, the wine ages for 14 months in barriques and Hungarian oak barrels in the historic cellars of the monastery (with vaulted ceilings that maintain constant humidity and temperature), followed by 12 months in the bottle.

Pairings Pappardelle with wild boar, Florentine steak, game, aged cheeses such as Pecorino Toscano.
