Champagne Pierre Gerbais Grains de Celles Extra Brut 2021 is a refined and authentic expression of the terroir of the Côte des Bar, in the Aube region, produced by the Pierre Gerbais house, known for its organic viticulture and the recovery of the rare Pinot Blanc "Vrai". This champagne is a blend of 50% Pinot Noir, 25% Chardonnay and 25% Pinot Blanc, from the best plots of Celles-sur-Ource, characterized by soils of marl and Kimmeridgian limestone, similar to those of Chablis.

 Organoleptic characteristics:
 Color: Bright straw yellow with fine and persistent perlage.
 Nose: Intense and harmonious bouquet with notes of white-fleshed fruit (peach, pear, lychee), citrus (lemon zest), white flowers, and nuances of toasted dried fruit, brioche and calcareous minerality.
 Palate: Fresh, balanced, with a creamy bubble and a vibrant but not aggressive acidity. The texture is soft, with flavors of ripe fruit (peach, nectarine) and a long, refined finish, with a marked minerality that gives elegance and persistence.
 Dosage: Extra Brut, with 3-4 g/l of sugar, which enhances the purity and freshness of the wine.



 Production method : The grapes are harvested by hand and vinified in temperature-controlled stainless steel tanks, with alcoholic and malolactic fermentation completed. The maturation on the lees lasts at least 30 months, giving complexity and structure. The maison adopts organic practices (Ampelos certified since 1996) and uses indigenous yeasts, with minimal use of sulfur to preserve the authenticity of the terroir.

 Pairings : Perfect as an aperitif, it pairs well with seafood, shellfish, fish in sauce, carpaccio, cheese gougères or vegetable quiche. It is also ideal with soft cheeses such as feta or chèvre.
