The 2021 Carat by Bressan is a white orange wine produced by the Bressan winery, located in Farra d'Isonzo, in Friuli Venezia Giulia. It is a blend of native Friulano, Malvasia Istriana and Ribolla Gialla grapes, grown on clay soils with calcareous marl and quartz sandstone, planted in 1990. The maison, led by Fulvio Bressan, follows an artisanal and sustainable approach, rejecting modern technologies and chemicals, using only indigenous yeasts and traditional vinification.
Organoleptic characteristics :
Color: Intense golden yellow, with amber reflections typical of orange wines.
Nose: Complex and lively bouquet, with hints of ripe apricot, nectarine, melon, orange peel, acacia honey, almond and light oxidative notes. There are also nuances of dried fruit (walnut) and sweet spices.
Palate: Fresh, soft and enveloping, with a full-bodied structure and a velvety texture. The acidity is well balanced, with a long and refined savoury-mineral persistence, accompanied by an almond aftertaste.
Production method : The grapes, hand-picked slightly late to ensure full ripeness, undergo soft crushing and destemming and maceration on the skins for approximately 20-28 days in stainless steel tanks, with spontaneous alcoholic fermentation. The wine is aged for approximately 3 years, partly in barriques and partly in 20-hectoliter oak barrels, with periodic batonnage on the fine lees. The wine is then assembled in steel for 3 months and bottled without filtration. Limited production: approximately 5,000 bottles per year. Contains sulphites (25-30 ppm). Alcohol: 13% vol.
Pairings : Perfect with elaborate fish dishes (e.g. baked John Dory with cherry tomatoes and aromatic herbs), raw shellfish, smoked fish, blue or mature cheeses. It also goes well with white meat dishes or tasty risottos.
