Ferlat Cabernet Franc 2022 is a red wine produced by the Ferlat Silvano winery, located in Cormons, in the DOC Friuli Isonzo, Friuli Venezia Giulia. This wine is made with 100% Cabernet Franc grapes, grown on gravelly soils rich in iron oxides in the hilly part of the area, which give the wine a distinctive character and a marked minerality. The winery, managed by Moreno Ferlat with a certified organic approach since 2017, follows a philosophy that combines tradition and innovation, without the use of synthetic chemicals and with spontaneous fermentations using indigenous yeasts.


 Organoleptic characteristics :
 Color: Intense ruby red with purple hues, lively and brilliant.
 Nose: Rich and complex bouquet, with notes of wild berries (blackberry, raspberry), ripe plum, violet and a characteristic spiciness of black pepper, accompanied by herbaceous (green pepper) and mineral nuances.
 Palate: Fresh, balanced and structured, with soft and well-integrated tannins. Lively acidity provides freshness, while the medium-full body offers flavors of red fruit, sweet spices and a long, mineral finish, with hints of tobacco.
 Alcohol content: Approximately 13% vol.
 Residual sugars: Dry, with minimal sugars.


 Production method : The grapes are hand-picked at the peak of ripeness to preserve the aromatic intensity. After destemming and crushing, the wine undergoes maceration for about 20-30 days in cement tanks with indigenous yeasts, followed by spontaneous malolactic fermentation. The wine is aged partly in oak barrels and partly in steel for about 12 months, with a further rest in the bottle for at least 6 months. Sulphur dioxide is minimal (25-30 ppm). Limited production: about 3,000-4,000 bottles.


 Pairings : Ideal with grilled red meats, game, mushroom dishes, stews or mature cheeses. Also perfect with smoked cured meats or spicy dishes such as beef stew. Serve at 16-18°C in large glasses, leaving it to oxygenate for 30 minutes.
