Ferlat's Ribolla Gialla 2023 is a white wine produced by the Ferlat Silvano winery, located in Cormons, in the DOC Friuli Isonzo, Friuli Venezia Giulia. Made with 100% Ribolla Gialla grapes from hillside vineyards grown on gravelly soils rich in iron oxides, this wine reflects the authenticity of the terroir and the certified organic approach (since 2017) of the winery, led by Moreno Ferlat and Federica Tabacchi. The production philosophy favors sustainability, with practices such as spontaneous grassing, natural mulching and the use of indigenous yeasts.
Organoleptic characteristics :
Color: Light straw yellow with greenish reflections.
Nose: Fresh and delicate bouquet with notes of green apple, pear, citrus fruits (lemon, cedar), white flowers (acacia) and herbaceous and mineral nuances.
Palate: Fresh, vibrant and well-balanced, with lively acidity and a pronounced minerality. The texture is fluid and elegant, with a savory and slightly spicy finish that invites another sip.
Alcohol content: 11.5% vol.
Residual sugars: Dry, with minimal sugars.
Production method : The grapes, harvested by hand, are destemmed and subjected to a short 48-hour maceration on the skins, followed by a soft pressing. Alcoholic fermentation takes place in stainless steel tanks with indigenous yeasts, without the addition of sulfur during the process. The wine ages in steel on the fine lees for several months, preserving freshness and varietal aromas. Total sulfur is minimal (about 25-30 ppm). Limited production: about 4,000-5,000 bottles.
Pairings : Perfect as an aperitif, it pairs splendidly with fish dishes (e.g. sea bass carpaccio), shellfish, fresh vegetable salads, vegetarian risottos or fresh cheeses (such as mozzarella or robiola). Serve at 8-10°C in medium-sized glasses.
